Our Story
For over a hundred years, our family has called the village of Ataeymir home. Today, as the fifth generation, we carry this legacy forward by combining the wisdom of our ancestors with modern production standards. Every autumn, we hand-pick our olives at precisely the right moment of ripeness (the brief window when the fruit is perfectly balanced; neither green nor fully ripe). We press the olives within 24 hours of harvest, at the first light of dawn, while the machinery is still cool (around 27°C).
By catching the fruit at its nutritional peak, we produce an oil with an intense aroma and a characteristic peppery finish; high in polyphenols and filled with the fresh spirit of the Aegean.

Our Process
We harvest by hand during the autumn months to protect the fruit; using traditional nets spread beneath the branches to prevent the olives from touching the ground.
Freshness is everything; we ensure all olives reach our facility within 24 hours of harvest to preserve their natural integrity and flavour.
By keeping temperatures strictly below 27°C during extraction, we preserve the oil's high polyphenol content, delicate aroma, and health benefits.
We let our oil rest naturally in stainless steel tanks — with no additives or heat treatment — before it is bottled for your kitchen.
Quality Assurance
Our olive oil is analysed by the Aydın Commodity Exchange Private Food Control Laboratory, accredited under TÜRKAK (AB-0033-T) and internationally recognised through EA and ILAC agreements — valid across the European Union. All parameters meet extra virgin classification.

We harvest olives at the çakır stage, the brief window when they transition from green to violet and polyphenol content peaks. Pressing is completed within 24 hours, below 27°C. We regularly test and document our product quality through TURKAK-accredited laboratory analysis.
